A beautiful Christmas Rocky Road to share with family and friends over the Christmas Holidays.
2 packets Mint Slice biscuits (roughly chopped into pieces 1-2cm)
10 Peppermint Crisp bars or Peppermint Aero Bars approx. 350 grms (roughly chopped into pieces 1-2cm)
2 cups mini marshmallows (preferably white or green)
1 cup chopped apricots
1 bar Hazelnut chocolate
1 bar good quality dark chocolate.
Place chopped mint slices, peppermint crisps, marshmallows and apricots in a bowl and mix well together.
Gently heat and melt the Hazelnut and dark chocolate bars.
Pour melted chocolate over the ingredients in the bowl and stir thoroughly thru to ensure all ingredients are well coated in chocolate.
Quickly transfer this mixture to your pre-prepared baking paper lined slice tray and place in fridge to set.
